creamy tomato & basil risotto

Rich, creamy and full of comforting Italian flavours, this tomato and basil risotto is surprisingly easy to make in the Mistral SuperSmart Pro Kitchen Machine. The sauté and cooking functions do the stirring for you, delivering a beautifully silky risotto with minimal effort.

Method
  1. Add the olive oil, onion and garlic to the bowl. Attach the stir paddle and sauté at 120°C for 3–4 minutes, or until softened and fragrant.
  2. Add the arborio rice and cook at 100°C for 1–2 minutes, stirring gently to lightly toast the grains. This simple step helps to unlock the rice's signature creamy texture.
  3. Pour in the white wine (or stock) and cook at 100°C until the liquid has mostly absorbed, approximately 2 minutes.
  4. Add the crushed tomatoes and stock. Select the Cook / Stir function and cook at 100°C for 20–22 minutes, or until the rice is tender and the liquid has mostly absorbed. If needed, add a splash of extra stock to achieve your preferred consistency. Now it's time to let the Mistral SuperSmart Pro Kitchen Machine do the hard work while you sit back and anticipate dinner.
  5. Stir through the butter and parmesan until melted and creamy. Season with salt and freshly ground black pepper to taste.
  6. Tear over the fresh basil leaves and gently fold through just before serving.
  7. Divide between bowls and finish with an extra sprinkle of parmesan and a few fresh basil leaves.
Serving Inspiration

Serve with a crisp green salad and warm crusty bread for an easy weeknight dinner, or alongside grilled chicken for a heartier meal.

Pro Move
For an extra flavour boost, stir through a handful of torn bocconcini or mozzarella just before serving. It'll melt into the risotto and create pockets of creamy, cheesy goodness in every bite.
