classic vanilla bean ice cream

Creamy, rich and timeless.

This Classic Vanilla Bean Ice Cream is made effortlessly in the Mistral Ice Cream Maker.

Featuring real vanilla and a silky homemade custard base, it's the perfect dessert on its own or paired with your favourite baked treats. Simply prepare the mixture, chill, and let the ice cream maker do the hard work.

Method
  1. In a saucepan, combine the milk, cream and half of the caster sugar. Heat gently until the mixture is just starting to simmer.

  2. Add the vanilla seeds and pod (or vanilla extract) and stir to combine. Take a moment to enjoy that delicious vanilla aroma filling the kitchen.

  3. In a separate bowl, whisk together the egg yolks and remaining sugar until pale and creamy.

  4. Gradually pour the warm milk mixture into the egg yolks and whisk constantly to prevent the eggs from curdling. Keep whisking to keep everything beautifully smooth.

  5. Return the mixture to the saucepan and cook over low heat, stirring continuously, until it thickens slightly and coats the back of a spoon.

  6. Remove from the heat and allow to cool. Refrigerate for at least 2 hours, or until completely chilled.

  7. Pour the chilled mixture into the Mistral Ice Cream Maker and select the standard ice cream churn cycle. Now, it's your machines time to shine!

  8. Allow the machine to churn for approximately 60 minutes, or until thick, smooth and creamy. Watch as your homemade ice cream transforms into a scoop worthy masterpiece.

  9. Serve immediately for a soft-serve texture, or transfer to an airtight container and freeze for 2–3 hours for firmer scoops. Whether you're team soft serve or team perfectly scoopable, the toughest part now is deciding who gets the first bowl.
