Air-Fryer Taco Tuesday:
Spice-up your weekly routine with Taco Tuesday! It’s fresh, simple, and guaranteed to be a family-favourite. This recipe was created using the Mistral 10L Digital Air Fryer.
Ingredients
- ½ cup of shredded red cabbage
- ½ cup shredded carrot
- 1/4 cup fresh coriander
- 4 tablespoons lime juice
- 3 tablespoons honey
- 2 teaspoons salt
- 2 large eggs
- 2 tablespoons full-cream milk
- 1/2 cup plain flour
- 1-1/2 cups panko breadcrumbs
- 1 tablespoon garlic powder
- 30-50 uncooked prawns, peeled and deveined
- 8 corn tortillas
- 1 avocado, peeled and sliced
- Cooking oil/spray
- ¼ cup fresh chilli to serve (optional)
How To:
- Combine shredded cabbage, carrot, coriander, lime juice, honey and salt. Set aside.
- Preheat your Mistral 10L Air Fryer to 120°. While you’re waiting, whisk eggs and milk.
- Place the plain flour into a second bowl.
- In a third bowl, mix panko and garlic powder until combined.
- Dip the prawns in the plain flour to coat both sides evenly, shaking off any excess mixture.
- Dip into egg mixture, then in panko mixture.
- Repeat this process with all prawns.
- Once completed, spread out a single layer of prawns in your Mistral Air Fryer. Give your prawns a light spray of cooking oil.
- Cook for 2-3 minutes. Turn; repeat the process with another light spray of cooking oil.
- Repeat for another 2-3 minutes, until golden brown.
- Assemble your tacos with your tortillas, shredded veggie mix and avocado.
