Watermelon Lime Slushie

Enjoy this tasty watermelon lime sushie thanks to the Mistral ice maker

When the temperature exceeds the 40's, a frozen drink is the ultimate thirst-quencher. We have an excellent solution in a watermelon lime slushie. Here's how to make this easy to create ice-cold slushie.

Ingredients

  • 5kg of watermelon
  • Simple syrup (see recipe)
  • Zest of 2 limes
  • Juice of 4 limes (about 1/2 cup total)
  • Ice from Mistral Ice Maker

Method

  1. Start by preparing the watermelon. Remove the skin and seeds, then cut it into 5cm pieces.
  2. To create a simple syrup, take a small saucepan and combine 2 tablespoons of white sugar, 1/4 cup of water, and 1/4 teaspoon of salt. Bring this mixture to a boil, then reduce the heat.
  3. Allow mixture to simmer without stirring until the sugar dissolves, which should take about 2 to 3 minutes. Once the sugar has dissolved, remove the saucepan from the heat and incorporate the zest and lime juice.
  4. Allow the mixture to cool completely, then strain into a small bowl or measuring cup.
  5. Work in two batches to puree half of the simple syrup mixture and half of the watermelon in a blender until a smooth consistency is achieved.
  6. Strain this mixture into a bowl. Repeat this process with the remaining syrup and watermelon.
  7. Blend the ice from your Mistral Ice Maker with the watermelon and lime until you create a slushie-type consistency.
  8. Pour the slushie mix into a glass, add a splash of soda water (and, for an adult experience, add a shot glass of vodka). Garnish with mint leaves for added freshness and a pop of colour.
