Ingredients

  • 1 cob loaf
  • 200g vintage cheddar, cut into 3 cm cubes
  • 1 spring onion, trimmed and halved
  • 200g rindless bacon rashers, trimmed and cut into pieces
  • 20g olive oil
  • 250g cream cheese, softened and cut into pieces
  • 250g sour cream

How to make

  1. Place the reserved bread pieces around the outside of the cob loaf on the baking tray, then bake for an additional 15 minutes. Serve immediately. Preheat the oven to 180°C and line a baking tray with parchment paper. 
  2. First, slice off the top of the cob loaf to create a lid. Then, scoop out the bread from the centre, leaving a 1.5 cm thick edge around the outside. Tear the removed bread into bite-sized pieces and set them aside. 
  3. Combine the cheddar and spring onion in a mixing bowl of your Mistral Intelli Kitchen machine by chopping for 10 seconds on speed 9. Set this mixture aside in a separate bowl. 
  4. Next, add the bacon and olive oil to the mixing bowl and chop for 5 seconds on speed 7. Scrape down the sides of the bowl with a spatula, then cook for 5 minutes at 90°C on speed 1. 
  5. Add the cream cheese, sour cream, and the reserved cheese mixture to the mixing bowl and combine for 15 seconds on speed 3. 
  6. Transfer the dip mixture into the hollowed-out cob loaf and replace the lid. Wrap the cob loaf in aluminium foil, place it on the prepared baking tray, and bake for 45 minutes. 
  7. Finally, place the reserved bread pieces around the outside of the cob loaf on the baking tray, then bake for an additional 15 minutes. Serve immediately.
