Peanut Butter Ice Cream

Ingredients
  • 250g banana, cut into pieces and freeze
  • 100g smooth peanut butter 
  • 100g coconut milk 
  • Coconut nectar to serve 
  • Cacao nibs to serve 
  • Coconut flakes, toasted, to serve

How to make

  1. Place the frozen banana into the Mistral Intelli Kitchen Machine and blend for 10 seconds at speed 6.
  2. Add the peanut butter and coconut milk, then blend for 40 seconds at speed 6 until almost smooth.
  3. Scrape down the sides of the mixing bowl with a spatula, then blend for an additional 20 seconds at speed 6 until smooth.
  4. If the ice cream is too soft, transfer it to a freezer-safe container and freeze it until firm.
  5. To serve, drizzle with coconut nectar (optional) and sprinkle with cacao nibs (optional) and toasted coconut flakes.
