muffins have been taste-tested and approved by the tiniest of tastebuds! They’re also
packed with protein and vegetables, guaranteed to give your tiny humans all the energy they
need for the day ahead!


They’re a perfect on-the-go snack, or if your morning routine looks more like a triathlon to get
to school drop-off in time! These Pie Maker Breaky Muffins can be refrigerated for up to a
week, so meal prep for the morning commute is easier than ever.


PS: If the winter chill has made you addicted to a warm, wintery breakfast—don’t worry.
These savoury Breaky Muffins can also be reheated in a microwave or in a saucepan for
1:30 seconds.

Ingredients:

  • 4 eggs
  • 2 bacon rashers
  • 2 spring onions finely sliced
  • 1/2 zucchini finely grated
  • 4 cherry tomato’s halved
  • 20 ml milk
  • 1/3 cup shredded cheese
  • 1 tsp grain mustard
  • 1 pinch black pepper and salt to taste

Method:

  1. Preheat your Mistral Pie Maker.
  2. Place eggs and milk into a bowl and whisk well to mix.
  3. Add spring onions, cheese, grated zucchini, mustard, pepper and salt into the mixture.
    Put mixture aside.
  4. Chop your bacon rashers into small pieces and fry off in a pan for around 3 minutes.
  5. Once the bacon is crisp, set aside to cool.
  6. Add the bacon into the breaky muffin mixture and mix well.
  7. Lightly grease the Mistral Pie Maker skillet.
  8. Spoon the mixture into the Pie Maker, adding a halved cherry tomato on top as a
    finishing touch.
  9. Close the lid and cook for 10 minutes.
