Custard Donuts recipe:

Ingredients:

Pastry:

  • 2 cups self-raising flour
  • 1/3 cup caster sugar
  • 1 cup milk
  • 1 egg
  • 60g butter, melted
  • 1 pinch of salt

Custard Filling

  • 1/4 cup cornflour
  • 1/3 cup caster sugar
  • 1/3 cup lemon juice
  • 1 egg yolk
  • 25g butter
  • 1/2 cup water

Method:

  1. (Custard Filling) Whisk cornflour and sugar together in a small saucepan. Mix in 1/2
    cup water and egg yolk. Stir continually over low heat until mixture thickens. Remove
    from heat and whisk in lemon juice and butter.
  2. (Donut Batter) Mix flour and 1/3 cup sugar and salt in a large bowl. Set aside.
  3. In a separate bowl, whisk milk, egg, and melted butter.
  4. Add this mixture to the flour and sugar mixture.
  5. Preheat your Mistral Pie-Maker, and lightly grease the plates.
  6. Scoop a tablespoon of donut batter into the pie-maker plates.
  7. Cook for 8 minutes, until golden brown. Set aside to cool.
  8. Once your donuts are cool, pipe your custard filling into the donuts.
  9. For an extra fancy touch—try rolling these donuts in a mixture of cinnamon and
    grainy brown sugar.
