Healthy Chocolate Mousse

Ingredients

  • 400g avocado flesh
  • 60g cocoa powder
  • 90g honey or maple syrup
  • 100g coconut cream
  • 1 tsp vanilla paste or extract
  • A pinch of salt
  • Mint leaves to decorate

Method

1) Insert the blade into the mixer bowl, add all ingredients besides mint leaves and strawberries
2) Unlock and remove the mixer bowl lid and scrape down sides of bowl then reposition and lock the lid and blend 20 sec speed 6
3) Unlock and remove the mixer bowl lid and scrape down sldes of bowl, the mixture should be smooth and creamy. If necessary, reposition and lock the lid and blend again for 20 sec speed 6
4) Unlock and remove the mixer bowl lid and spoon the mousse into glasses. Chill for an hour before serving, garnish with a mint leaf
