Weve found this pressure cooker to be an excellent tool in the kitchen however my only gripe with the product has been the fact that no detailed pressure information has been published by Mistral regarding the unit. In order to understand how food is being cooked it would be far more useful if Mistral could advise customers of the operating PSI that this unit is operating at. Most pressure cooking recipes will talk about cooking times based upon whether a unit is operating at 20, 25 or 30 PSI. Can Mistral please provide this basic information.
