FUNCTIONS USED

  • Sauté (120°C, Stir Paddle)
  • Cook / Stir (100°C)

INGREDIENTS

  • 1 tbsp olive oil
  • 1 brown onion, finely diced
  • 2 cloves garlic, minced
  • 1½ cups arborio rice
  • ½ cup dry white wine (or chicken stock)
  • 400g can of crushed tomatoes
  • 3 cups chicken or vegetable stock
  • ½ cup parmesan, finely grated
  • 2 tbsp butter
  • Handful of fresh basil leaves
  • Salt and pepper to taste

METHOD

  1. Add olive oil, onion, and garlic to the bowl. Sauté at 120°C for 3–4 minutes using the stir paddle attachment until softened and fragrant.
  2. Add arborio rice and stir through for 1–2 minutes at 100°C to lightly toast the grains.
  3. Pour in the white wine (or stock) and cook at 100°C, stirring, until the liquid is absorbed, approximately 2 minutes.
  4. Add crushed tomatoes and stock. Cook at 100°C on the stir function for 20–22 minutes, or until the rice is tender and the liquid is mostly absorbed. Add a splash of extra stock if needed.
  5. Stir through butter and parmesan until melted and creamy. Season with salt and pepper.
  6. Serve topped with fresh basil leaves and an extra sprinkle of parmesan.

Lemon & Herb Steamed Salmon with Greens

INGREDIENTS

  • 2 salmon fillets (approximately 150–180g each), skin on or off
  • 1 lemon, thinly sliced
  • 2 sprigs fresh dill (or 1 tsp dried dill)
  • 2 cloves garlic, thinly sliced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 150g broccolini or tenderstem broccoli
  • 100g sugar snap peas
  • 1 tbsp soy sauce or tamari (to serve)
  • Steamed rice or crusty bread to serve

METHOD

  1. Add 500ml of water to the bowl and heat to 100°C using the steam function.
  2. While the water heats, place the salmon fillets in the steam basket. Lay lemon slices, garlic, and dill on top of each fillet. Drizzle with olive oil and season with salt and pepper.
  3. Arrange the broccolini and sugar snap peas around the salmon in the steam basket.
  4. Place the steam basket over the bowl once the water is at a temperature. Steam for 12–15 minutes, or until the salmon is just cooked through and flakes easily with a fork. Reduce time by 2–3 minutes for a slightly pink centre.
  5. Carefully remove the steam basket. Drizzle the greens with soy sauce and serve alongside the salmon with steamed rice or bread.

INGREDIENTS

  • 3 very ripe bananas (the riper the better)
  • 80g butter, melted
  • 90g caster sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1½ cups plain flour
  • 1 tsp baking soda (bicarbonate of soda)
  • ½ tsp cinnamon
  • Pinch of salt
  • Optional: ½ cup walnuts or chocolate chips

METHOD

  1. Preheat your oven to 180°C (160°C fan-forced). Grease and line a standard loaf tin with baking paper.
  2. Add the chopped bananas to the bowl and set the food processor at a low speed (level 2–3) for 10–15 seconds until smooth. A few small lumps are fine.
  3. Scrape the sides of the bowl. Add melted butter, sugar, eggs, and vanilla extract to the mashed banana. Mix on a low to medium speed (level 4–5) with the stir paddle attachment for 20 seconds until well combined.
  4. Scrape the sides of the bowl. Add flour, baking soda, cinnamon, and salt. Mix on speed 2 for 10 seconds. Scrape down and repeat until just combined. Do not overmix, or the bread will become dense. Add walnuts or chocolate chips and mix on speed 2 for 5 seconds.
  5. Pour the batter into the prepared loaf tin and bake for 55–60 minutes, or until a skewer inserted in the centre comes out clean. If the top browns too quickly, loosely cover with foil for the last 15 minutes.
  6. Allow to cool in the tin for 10 minutes before turning out onto a wire rack. Slice and serve warm with butter.
